Many of you can relate to Working long hours at your career. Raising your families. Buying a home and paying all the bills related to being homeowners and parents. We're now retired and don't need all that work and expense. Now "It's about time" and what we do to follow our dreams.

Easter Baking and Cooking.

 Our Location today is Windsor, Ontario.

I woke a few times throughout the night because my CPAP Mask leaked. When you get hit with air in your eye you know it’s leaking. Luckily it didn’t wake Kathy and she slept soundly until morning. The last time I looked at the Clock it was 5:30 but within minutes I was again sleeping. The next time I looked Sunlight was peaking around the Window Blind and the Clock showed it was nearly 8:30. I didn’t worry about the time since I wasn’t going to the Gym.

Outside the Sun was shining but the temperature was well below seasonal with the help of a North Wind.

I had barely started getting washed when Kathy came from the bedroom feeling refreshed. As we had our Toast for breakfast she said she didn’t hear my Mask leaking.

We only spent an Hour on the Computers before starting to work together in the kitchen. We will be attending our Family Easter Dinner at our daughter’s house tomorrow. Even though Kathy had mentioned bring one thing as our contribution to the meal she thought she’d bring a homemade dessert as well. Unfortunately due to the Arthritis in her hands she didn’t have the strength needed to crush some of the ingredients then to spread the filling. With her coaching we managed to finish just before 1:00.

Lunch was simply Leftover Summer Pasta Salad and Leftover French Pastries for dessert. Not the breakfast of champions but it did the trick.

We then spent a couple of hours on the Computer where I managed to get caught up on Blog reading before I headed back to the Kitchen. Still having Vegetables leftover from the Stir-Fry I made this week I planned on adding additional Veges we picked up the just other day. I also used the One Sized Lid we found this week between stirs while I continued chopping more of the mix. It helped keep the moisture of the Vegetables in.

It was past 4:30 by the time we sat down to enjoy our meal. This time I didn’t cook as much Pasta Noodles but there is still enough Vegetables that have and have not been cooked ready for more meals.

The Weather Network showed we only reached 41 F (5 C) with a forecast of Mixed Precipitation for tomorrow.

The 6 o’clock Local News was delayed due to a PGA Tournament by Twenty Minutes. Then they reported on the increased number of Coronavirus Cases in the Province of Ontario. If it continues the Mask Restrictions could be reinstated.

Kathy and I hope that all our Readers and their Families had a Safe and Happy Easter.

  1. Happy Easter. When are you guys planning on getting back to your RVing? When we returned from Florida in a hurry in 2020 because COVID had just started we knew that we wouldn't be able to do our usual winter RVing trip for some time. We ended up selling our 5th wheel and truck last July. For us the RVing is done. But we had a great 14 years.

  2. You can buy packaged sauces for stir-fry veggies. Some in the dry packages ( where you can find gravy mix or meat loaf mixes ) by Club House or McCormicks. I also but a wet stir fry sauce in small 140ml foil packets made by Blue Dragon - General Tao, Honey Teriyaki or Sweet & Sour. I buy those in larger stores like Save On Foods.
