Many of you can relate to Working long hours at your career. Raising your families. Buying a home and paying all the bills related to being homeowners and parents. We're now retired and don't need all that work and expense. Now "It's about time" and what we do to follow our dreams.

Reserving Our Site, Riding Around The Park, Getting Information About Our Friend and Working Together To Make Two Fantastic Meals.

Our Location today is McGregor, Ontario, Canada.

Sleeping with the windows open for the first time in over a week surely had a profound effect on the both of us. We slept like a couple of rocks that were so filled with fresh air that we barely woke up before 8:30 this morning. 
The trees are already changing colours and losing their leaves.
Once our breakfast was over we again settled in at our Computers with our two cups of Coffee while doing all our reading. We managed to read a number of Blogs that we follow who were fortunate enough to have only gotten minor damage to their homes in Florida while others only collected trash from the neighbourhood in their yards as well as having no Electric Power.

After leaving another voice message to the Benefits Rep at the local Kathy and I chose to go run our own local errands. We rode our Tandem Bicycle up to the Park Office where we paid our deposit for our Site for next year. Val was surprised that we had kept our power usage down quite a bit this year to the point where the extra payment we’d made this summer was removed from the deposit. Since we installed our Solar Panels last winter the Converter in the trailer that would normally charge the Batteries from the pole has been turned off. With the Inverters that were added we have let the Sun help us keep the power usage from the pole down quite a bit. At this point we figure that our Solar Power System has already half paid for itself.

Instead of heading straight back to our site we started riding around the Park to get some exercise. We had covered nearly three quarters of the Park when we ran into Larry. He and his wife Nichol used to be on the site we are presently on and we’d gotten quite friendly with them last year. A couple of weeks ago Nichol had a bad fall on the patio on their new site that broke her leg. We found out that she is slowly healing, going through Physical Therapy but might be out on a day pass in another week. We expressed our best wishes before heading off.

Back Home we worked together to make not only lunch but supper as well. Since my hands are not as affected by Arthritis as Kathy’s I performed the chopping while Kathy did all the cooking and seasoning. This also helped to not only use up any Vegetables that might be nearing the end of their shelf life but it also used up a couple of packages of Meat that we would not be able to bring across the International Border when we head south in November.

For lunch Kathy used a package of Breakfast Sausages from the Freezer that I chopped along with Onions a mixture of Red, Orange, Green and Yellow Peppers with a pinch of Red Chili Flakes and Sauerkraut. This was cooked and rendered down and serve over a bed of Egg Noodles. There were a few more spices added that I didn’t see because I was still chopping more vegetables for our supper dish. It tasted fantastic and there is more for another lunch.

Once lunch was finished we went back to making things for supper. This time I cubed some Steak that had also been in the Freezer. Using the same chopped Onions, a mixture of Red, Orange, Green and Yellow Peppers with a pinch of Red Chili Flakes Kathy worked her magic while I cut up a Cantaloupe we’d gotten the other day and had for dessert.

When we ate our supper after the 6 o’clock Local News Kathy served her Pepper Steak over Rice with a bit of Spaghetti Sauce. This is a dish that always pleases because it is delicious and we have another meal of this waiting for us as well.

  2. I cannot sleep with the windows open. It's just TOO noisy. I guess I'm weird, because it seems to help everyone else!! I can see I need to get MUCH more organized in the kitchen!!
