Many of you can relate to Working long hours at your career. Raising your families. Buying a home and paying all the bills related to being homeowners and parents. We're now retired and don't need all that work and expense. Now "It's about time" and what we do to follow our dreams.

Happy Easter



Our Location today is Bushnell, Florida.

We were back to normal this morning sleeping in until nearly 8:00 this morning. It was still cool enough that we turned the furnace on for a single cycle just to warm the trailer to be comfortable. After only a few minutes of blog reading we were sitting down to enjoy a nutritiously filling Easter breakfast for two.

During breakfast we were able to complete our plans for the day and scheduling what little time we would have left. This is the first year that we have not celebrated this event without our family but today we would be celebrating it with our extended RV family here at Breezy Oaks RV Park. The park was supplying Easter Ham with everyone else bringing side dishes.
 
So once we got dressed we immediately set to the task of making our contribution to dinner. Our dish was mentioned in the blog just the other day and is called Hawaiian Marshmallow Salad. We find it easier making it with canned fruit but it all has to be drained so the dish does not become too mushy. The juice drained will now become our morning drink of juice tomorrow. Then all the fruit must also be cut into small pieces. Finally add coconut and it is all mixed with small sized marshmallows and sour cream in a mixing bowl or pot being careful not to over stir causing the fruit to lose more juice. Once it was put in the serving tray it was then placed in the refrigerator to cool.

By this time we stopped for a light snack for lunch in order to keep Kathy’s sugar regulated.  Now we had time to relax by reading blogs and e-mails. Of course it wasn’t long before Kathy was back to researching RV parks for our stay in Florida next winter. She now has already confirmed two parks for January and February but the one park she had been looking at for March didn’t seem to have very much for us to do there and everything else is quite a distance from it.
 
 
Just before 2:00 we headed over to the clubhouse where everyone was already gathering. The place still had a bit of room but it was a good sized turnout. There was more food than if you had gone to a Smorgasbord. There were a number of side dishes besides salads and desserts. Most everyone after eating and visiting before they left were waddling back to their trailers.
I had half my plate empty before I thought to take a picture of it.
Kathy went back to her research while I changed my clothes and went outside to wash down our bicycles which like the trailer they never got cleaned since our arrival in Florida. Now we’ll be able to ride them for the short time we have left before returning home.
Kathy finally came outside after a while just to relax in the sunshine and talk to me wearing her Easter hat. As I was spraying her bicycle to rinse it with the hose a hard gust of wind came along and she got wet. She said I did it on purpose but if I had she’d have been a lot wetter than she was.

The temperature should be comfortable enough to sleep with the windows open tonight and climb to the low 80’s tomorrow. I’m sure we’ll find something to keep us busy. Thanks for following along and feel free to leave a comment. Be Safe and Enjoy!

  1. I just started reading your blog tonight. I found you on HitchItch. I see where you are in Breezy Oaks and looking for a place for the next time you come to Florida. Have you been to Rock Crusher Canyon RV Park in Crystal River? We bought a site here in 2007 and really like it here. It is a park like setting with lots of trees.

  4. I make a salad called 5 cup. Ever heard of it?
    It is 1 cup each of, mandrin oranges, coconut, sour cream, marshmellows, and pineapple. Sounds very similar to yours today. We love it. Looks like you had a delicious Easter dinner too. Happy Easter to you both.
