Many of you can relate to Working long hours at your career. Raising your families. Buying a home and paying all the bills related to being homeowners and parents. We're now retired and don't need all that work and expense. Now "It's about time" and what we do to follow our dreams.

Cooking Up, Cleaning Up and “The Accountant”.

With all the outdoor work we have been doing we really didn’t plan to sleep in this morning but with the tapping on our roof from the Rain that wasn’t supposed to arrive until later this afternoon is it any wonder. The experts say that there’s no Global Warming but with all the Icebergs that are melting that water has to go somewhere. Why not drop it on Drought Stricken Areas. Instead it keeps dumping on the same areas all the time.

After we finally got ourselves downstairs for a Muffin for breakfast and a single Coffee/Tea at the Computers we got ourselves moving.
With the Arthritis in Kathy’s hands she asked for my help chopping Vegetables, Chicken and Fruit. They surely don’t sound like they go together and that was because they didn’t.

Kathy was busy making her Homemade Chicken Vegetable Soup as one dish and Homemade Apple Sauce for a second. She also had me outside doing some grilling.
In order to stay dry I moved our Weber Q under the Gazebo. Using a Grill Mat I cooked up Three Pounds of Bacon that Kathy will then freeze. She can simply warm it up or not to use in Salads, Sandwiches or a number of different dishes when she needs to.
Unfortunately with Aromas coming from our Trailer and on our Weber there were many people passing by that were wondering what was for lunch. It was after 1:00 when I finished up outside and as I was bringing in the Cooked Bacon Kathy was serving our Lunch.
The Homemade Chicken Vegetable Soup tasted wonderful and was satisfying but Kathy also served some of the Homemade Apple Sauce and a piece of Cake for our dessert. The beauty of this meal is when you make it yourself you know what is in it like no chemicals and there’s more for another meal.

While Kathy had the chore of putting the Bacon in Containers for freezing and cleaning the Dishes while I went for a ride.

It wasn’t a joy ride considering that it was still raining. I drove first to behind the Park Maintenance Shed where the Compost Bin is located. We had quite a load of Yard Waste that needed to be dropped off. Once that was completed I had to drive over to the Trash and Recycle Area to get rid of the rest of the load including the empty Plastic Bags that were not allowed in the Composting Bin.

Back Home I found that Kathy had everything cleaned up but she was concerned. With more appointments this coming week we needed to find time to do our Laundry. Since the we were still getting short showers outside it seemed like perfect timing. I even estimated that it would easily take until 7:00 this evening before I would be finished.
I had my choice of Washers so as soon as everything was in the Dyers I headed back Home. It seemed that my estimation would hold true so Kathy had me chop up some of the Bacon so she could add it to an Omelette. It all tasted wonderful. If that Bacon had not been precooked she could not have added it to the eggs the way she did.

By the time I got back to the Park Laundry Room the first Dryer was about to stop. With the Laundry all folded and loaded in the Car I looked at my watch to see it 7:05.

Once the clothes was all put away we decided to watch the movie “The Accountant” starring Ben Affleck. It was 128 Minutes long but it kept you wondering what was going to happen next. That is one Accountant you don’t want to cross. We both gave it a Ten out of Ten.

  5. Love the way you cook the bacon ahead of time and can have it whenever you want! That's a late laundry time for sure! Take time to rest with the busy week!
