Cooking Up A Root, Kathy’s New Glasses and Another Appreciated Visit.

Even though the Sun mainly stayed hidden behind Clouds all day it peeked around the Window Shades enough that I was up before 8:00 this morning. Having everything ready for breakfast I got an early start on my Blog Reading before Kathy came downstairs at 8:30. As soon as we’d eaten she made certain that my Eyedrops were applied. After having only a single cup of Coffee I started back into my old routine of making the Bed before shaving.

Back in the kitchen by 11:00, I started cleaning up one of the Celery Roots we were able to get last weekend. These are a Seasonal Vegetable and are not available at all the grocery stores. Being of a large size we knew we could enjoy a satisfying lunch and surprise someone later this afternoon.

With it all clean, peeled, and sliced I put them right into the pot to start boiling on the Stove. That is a necessary step in order to soften them up. The fact that I sliced them closer to a Quarter of an Inch Thick meant that it took less time for that to happen. Kathy insisted that the cleaning was a single person task because of the limited work space and so was the breading and frying. After they were cooked and let to cool she started with the Egg Dip, then Breading before putting them into the Vegetable Oil in the Frying Pan. Kathy watches that they don’t burn liking them to be a golden brown. Due to the larger size of these Celery Roots she had to change the oil a few times because some of the Breading stays in the Oil and attaches itself to the next slice making it start to burn.

Lunch tasted wonderful and it was all Healthy. After Kathy made up a small plate to bring with us this afternoon we worked together cleaning the dishes before getting ready to head out the door.

We had just filled our hands with everything we needed to bring when the phone rang. It was our Optometrist’s Office calling to say Kathy’s Reading and Computer Glasses were in. With a change in plans that became our first stop this afternoon. Since her Cataract Surgery Kathy has relied on Cheaters for reading and has been getting a lot of headaches. Trying her new glasses on she noticed an immediate difference in the clarity and it didn’t feel like her Eyes were straining. The best part was that both pair of Glasses were totally covered under our Health Care Coverage.

After a quick stop at Guardian Storage to pick up our Mail we drove over to Green Shield where we submitted Kathy’s Claim for the visit by Mary from Healthy Heals.

Last Saturday we found our new Debit Cards in our Mail and had stopped at the Credit Union to activate them. While there I also changed the P.I.N. on my new Card. Later when I went to use it I forgot about the new P.I.N. and using the old one managed to electronically lock the card up. That called for another quick stop at the Credit Union to get it unlocked.

Finally, we made it back to the Metropolitan Hospital to visit with Vera. When we walked into her room she was busy reading the Book that we had bought her on Saturday and she was nearly finished. Since Vera was the person that showed Kathy how to do the Celery Root many years ago she was very happy when she saw the small plate full for her as a snack. Warm or cold it tastes wonderful and she said it was just like she used to make.

I recalled that Kathy had put a bag full of Books that she intended to take to the Park Exchange Library in the back of the Escape. While Kathy and Vera visited I walked back to the Car and brought the bag upstairs. Kathy selected which books she thought would interest Vera. With a broken Wrist and Ankle, reading will help to occupy some of her time.

We were still there when her dinner tray was brought up. It was a complete meal nothing like the food either of us could remember getting on previous stays. It looked better then what some restaurants serve. We promised to return later this week and left shortly after 5:00.

Heading up Walker Road we stopped at the Bulk Barn where we had a Coupon to buy some Pecans and Pitted Dates at below their already low prices.

Driving across the road to Wendy’s we ordered from the Value Menu getting Two Chicken Wraps, Two Medium Sized Chocolate Frosties and Two Senior’s Soft Drinks all for $7.19. My Debit Card worked perfectly and our food was delicious.

  1. What a difference of the celery root from beginning to end! You'd never know it's the same thing. How nice that you visited Vera again. I'm sure she was very happy to see you especially with her special treat.

  2. I've never heard of cooking celery root that way. Gonna have to try it. It's awfully nice of you two to visit Vera. Hope she's out of there fairly quickly.
