I was surprised when I woke this morning after sleeping for nearly Six Hours straight just in Bed, not counting the time spent in my Recliner. It felt wonderful feeling so refreshed.
Though breakfast would only be Cereal, I had to gotten everything ready for when Kathy came out to join me. Once that was ready, I settled in at my Computer in order to start my morning reading. Once we had eaten it took nearly until noon to accomplish that task.
One of the reasons I am not as active at the moment is from the Pain and discomfort that I am experiencing in my Shoulder. If the problem is in the joint, then Physiotherapy is perfect, but if it is a Soft Tissue injury, it could require surgery to repair. We’ll keep our fingers crossed.
Another reason has been this crazy weather. In early April we were getting near Summer-Like weather, now it is May and the weather is nearly Winter-Like. We just want it to warm to a comfortable temperature and dry out a bit.
Just before noon I got a Text from my Cousin informing me that my Aunt Anna’s health has taken a turn for the worse.
We shared a Store-Bought Thin-Crust Medium Hawaiian Pizza for lunch. By doing so, we could continue working at our Computers while eating.
The Rain continued to come and go throughout the day, looking more like Fog and totally blocking out the Sun. Things should start to clear for us tomorrow.
A recent Comment had some interesting questions about Perogies, so I’ll try to answer them today. Perogies are mostly made with Mashed Potatoes and can be used as a Side to a meal with Meats and Veggies, or as the meal itself, and we have done both ways many times. Mainly it depends on how many dishes or pots and pans you feel like washing afterwards. Just remember that you are eating a lot of Carbohydrates that can affect your Glucose Levels.

we have found the

that fills our needs and is the best tasting here
are
labelled Cheemo
and
found in
the Frozen
Food Section
in
the grocery stores.
If you are more into making your own Perogies it is fairly simple. My late wife and I belonged to a group trying to raise funding for the School our kids attended. Along with other parents at our home, we set up a production line to make the perogies for fund raisers. After cleaning, pealing, boiling and mashing the Potatoes, add Margarine or Butter, Crumbled Cheese of your choice, possibly adding finely chopped Chives or Onions to the mix for flavouring.
We would purchase the Chinese Won Ton Wraps as the shells and kept them refrigerated until they were about to be used. A small ball scoop was used to add the still warm Cheesy Mashed Potatoes to the Wraps, then sealing them using Egg Whites along the outer edge of the Wrap, they were Finger Crimped to seal it together. We stacked cookie sheets in our Chest Freezer in order to keep their shape. Once they were frozen, they were transferred to Zip-Lock Bags that held one dozen each.
At
the Fund
Raiser
the
Perogies
would be put in boiling water to cook. Frozen they sink, but once
they are cooked, they float to the surface. Some people like to add
Butter,
Sour
Cream,
Shredded
Cheese
or
Bacon Bits.
It’s wise to add Black
Pepper
for seasoning, but never Salt.
Some people also like to saute their Perogies.
I hope this helps you find the way you like them the best. By the way, we enjoyed Perogies for supper tonight.
