Many of you can relate to Working long hours at your career. Raising your families. Buying a home and paying all the bills related to being homeowners and parents. We're now retired and don't need all that work and expense. Now "It's about time" and what we do to follow our dreams.

Cooking Up A Storm.


Our Location today is at the Alamogordo/White Sands K.O.A. NM.

We are still amazed that we are traveling south to get away from the cold temperatures and they seem to be following us. At least when we looked at The Weather Network this morning we were a whole Two Degrees warmer then back in Windsor.

Kathy had mentioned before going to bed last night that she really felt worn out so when she slept in this morning I wasn’t too concerned. When she came downstairs she was surprised to see that I was actually cooking breakfast this morning. We had Bacon and Eggs over easy with Toast and Coffee/Tea. She had commented the other day that she wanted something different so I obliged. With nothing planned for today we made our morning a Two Cup morning at the Computers.

We were soon busy working together to clean up some Leftovers and other Vegetables we had in the Fridge. Kathy stripped the meat off the Chicken while she had me chopping the Vegetables that she planned on using for Three different meals. First she was making was a very thick Chicken Vegetable Soup. The Second was Chili and finally Stuffed Portobello Mushrooms. Even though the outside temperature was just 50 F (10 C) we needed to open the door to help cool things down inside.
For lunch we only ate the Portobello Mushrooms. They were delicious and more then filling according to our activity level.

After getting the kitchen cleaned up we went On-Line and found out that there is still more that we can see in the area so we will probably be busy tomorrow. We had to start shutting the Windows and Door by 4:00 this afternoon because the cool breeze was more then we could take.
The Chicken Vegetable Soup helped get the chill out of our bones as well as filling us up for supper. Not a bad way to use up your Leftovers and there’s enough for another meal.

Looking at the upcoming forecast we are definitely hoping to be out of here for this coming weekend. Not so much the Colder Temperatures but the Mixed Precipitation that’s expected in Alamogordo. Thank you for following along and feel free to leave a comment.

  1. WOW I sure hope they get your truck done by tomorrow that really is costing so much extra for you by having to rent a truck.
