Our Location today is Apopka,
Florida.
The prediction was for severe storms for our area starting
around noon. Shortly after breakfast
we looked out our door to see this little squirrel chowing down as if it might
be a while until his next meal.
Kathy and I decided that since the weather was not promising
we’d make it a cooking day. Together we worked at making some Taco Soup. Kathy was
adding ingredients while I was chopping onions and celery to cook with the
meat. Once everything was cooked and put together we noted that it was way to
early to be eating lunch besides we weren’t feeling hungry. We simply put it in
the slow cooker so it could simmer while we got caught up on the computers.
It was delicious as always when we finally ate around 1:00 so much that we each had a second bowl. We
also have enough left that we’ll be having Taco Soup a few more times in the
next week.
As the skies began clouding over we decided to sit outside
and enjoy the 82F (28C) weather considering the forecast is for rain on and off
for the next few days. Everything here is very dry and there was talk of Fire
Bans if we didn’t get some rain soon. Sitting out like this gave us a chance to
see where the squirrel that visits us every morning lives.
Kathy made use of the book exchange that the park has and
then we headed down to drop off our garbage in the bin. The park picks it up at
your site but this gives us a little exercise by bring it down ourselves. We noted
that some of the local flowers are already starting to bloom showing signs of
an early spring.

On our way back from the walk we started talking to Joanne and Wayne Waugh who are Fulltimers from London,
Ontario. We even sat outside for about ten
minutes sharing notes and places where we have all been when we started feeling
the start of a light rain shower. We invited them in but they had left their
windows open on their rig and needed to get back. We’ll see them again soon and
visit some more.

After we were in for five minutes it started raining harder
for a while then it would stop. This on and off rain has and will continue for the next few days
but we’ll find something to do. Thanks for following along and feel free to
leave a comment. Be Safe and Enjoy!
It’s about time.

Cool it with
Multiple Frozen Dinners! The
office refrigerator is not your personal space to store your twenty frozen
meals because you're too lazy to bring one from home every day. There are fifty
people sharing one fridge, and many of us bring lunch to work and would like a
place to put it. Please bring your "Smart Ones" (an oxymoron for you
if I ever heard one) one at a time like the rest of us.

A fun day again, we have had way to much rain here now its your turn. Hope it stays warm enough for you.
ReplyDeleteI love taco soup.
ReplyDeleteIf the area may have a burn ban, that rain is a very good thing.
Sure got some pretty blossoms already. I made some taco soup the other day too. Sure tasted good. Homemade soup goes well here in Oregon in the winter.
ReplyDeleteTaco Soup....hum, Is there a recipe?
ReplyDeleteI agree...do we get a recipe? We love soup and especially left overs!
ReplyDeleteEnjoy your reading!
Taco soup looked good and so did your waffles. A few days of rain sure beats a few days of snow. Glad you both are enjoying your Florida vacation.
