Loud Thunder, Making Pepper Steak and Businesses To Open.

By the time I got to bed last night I could barely keep my eyes open. By 2:00 my eyes were again wide open and I could not seem to get back to sleep for the next couple of Hours. Even with that interruption my eyes were wide open by 8:30 this morning.
Looking outside you could see the dry spots on the pavement where vehicles had just recently left. Enjoying our Coffee/Tea at the Computers we both nearly jumped out of our chairs when a sudden clap of Thunder sounded loudly. It was only minutes later that the intensity of the Rain increased.
Not being too active we kept lunch Lite having Split Pea Soup along with an Apple, Yogurt Cup and Cookies for dessert. As soon as we’d finished our Tea while sitting back at the Computers we headed back to the kitchen.

I dug out our Crock Pot while Kathy pulled the Meat our of the Freezer and the Vegetables out of the Fridge. I started cubing the Steak while Kathy cored the Peppers. Once I had half the Meat cleaned and prepped Kathy layered it in the Crock Pot while I started chopping the Peppers along with Onions and Celery. I then finished working on the rest of the Steak and Peppers while Kathy again layered everything in the Crock Pot. Again the process was repeated until everything was layered and the Crock Pot was given the job of cooking supper.

I took some time to assemble the new Storage Shelf and attach it to the wall in our Storage Room with a Safety Strap. We don’t need to hear a crashing sound in the middle of the night.

The Rain finally stopped around 5:00 but we stuck to our Computers until the 6 o’clock Local News started. It looks like other businesses may be reopening in our area by the beginning of June. Their weather guesser showed we could expect more Thunderstorms throughout the night.
When the News was over we cooked up Rice and warmed up some Spaghetti Sauce. After making a bed with the Rice in a bowl Kathy added the Pepper Steak topped with the Spaghetti Sauce seasoned with a sprinkle of Parmesan Cheese to make it perfect. The best part is there is enough Pepper Steak for a couple more meals.

The Rain should end shortly after lunch tomorrow so we might get a chance to run some errands.

  1. I'll say one thing ... you certainly do have the weather where you are. Here, we may have a few rainstorms, but rarely thunder, never lightning and never EVER snow. Maybe that's a good thing.

  2. Hopefully you'll get some sunshine soon! We love thunder and lightening! We were awoken this am by a 6.5 earthquake, now wasn't that fun!!

  4. This must be the wettest spring weather we've had for a long time so it shouldn't be hard for most people to stay indoors. RV Parks are going to open up tomorrow but there is rain for all of next week starting on Sunday. :-(
