Many of you can relate to Working long hours at your career. Raising your families. Buying a home and paying all the bills related to being homeowners and parents. We're now retired and don't need all that work and expense. Now "It's about time" and what we do to follow our dreams.

Tomatoes and Making The List.

As per usual I started my night in my Recliner before moving to our Bed. After we sat down to have breakfast this morning, when asked Kathy did not remember walking around the Livingroom around 1:30. I even waved to her, (I’m a light sleeper), when she was only inches from me, but she just kept checking things around the room before going back to bed. That answered another question. Even though we are getting lots of sleep, we are still waking up tired in the mornings and it’s not all from me sleeping in the other room part of the night.

We busied ourselves getting our morning reading in, on our Computers before getting things ready for lunch. I have been basically doing what Kathy did when we first got together Twenty-Five Years ago. She would look in the Fridge and Pantry, then create a meal from what she had seen. Lucky for Kathy she had a Grandmother and Aunt that took the time to teach her how to cook. I grew up working on Cars and doing chores, only learning a few cooking tips from my Sister Anna when I moved into my first apartment. I learned some cooking while my kids were growing up, but more since I’ve retired. I’ve also been taking note on different produce that used to be a lot different than it is today. An example are Tomatoes. Years ago, you could make sandwiches or relishes with any Tomato you chose. Today most are grown in Greenhouses and have cores that are not edible. I’m looking forward to stopping at Farmers Markets or Roadside Stands this year to see if my theory is correct.

Today it took Ten Tomatoes to make our Tomato Cheddar Soup instead of the normal Five that it usually takes. I also added finely chopped Onion to the Bacon and Cheddar Cheese in the mix. I also hand shredded a few slices of Bread that were starting to get stale in the bottom of the bowl rather than crackers. It tasted wonderful even though I had not seasoned it. We both waddled way from the table.

After cleaning up the kitchen and washing the dishes, I sat down to make the Repair List for our Apartment. I described each problem, how it got that way and how to fix it. It took over Two Hours to create and is nearly Six Hundred Words after editing. Kathy agreed to what I had written but it was past 5:00 by the time it was finished. I’ll deliver it to the Office tomorrow morning.

Since lunch had been so filling, we didn’t eat supper until the 6 o’clock Local News was finished. that’s when we shared a Store-Bought Thin-Crust Medium Spinach Pizza with added Green Olives. Two meals without any dessert is a good thing.

We later watched “Law and Order” along with “Elsbeth” for entertainment.

Under Sunny skies our temperature reached 83 F (28.3 C) today. Tomorrow is looking to be very wet.

  1. Are youngest is a great cook on the smoker. He has two of them different types of pellets and a box of spices.
    He went to utube University lol.

  3. We have been getting fancy heritage tomatoes at NoFrills from a Leamington grower. They are all different colors and they taste amazing. My cousin in Florida is finding the very same from this grower in her neighbourhood grocery store!
