Lip Smacking Run Around Day.

This morning I was a little confused as Kathy was out of bed before me. Seems that lately I have been reading so many others blogs as well as working on ours I am dreaming of it in my sleep. No wonder I'm waking up tired.

Immediately after publishing our blog last night I noted we had a few new followers. We'd like to Thank Gail Durham from MeMoirs Of The Trailerhood. for following. I've been reading Gail's post of working at the mall until camping season opens after having spent years in Mexico with here travel buddy Jodie. We also noticed another follower listed as Erin. Unfortunately I couldn't find anything about a blog or E-mail but we still would like to say Thank You for following our blog and hopefully in the future you'll have a blog so we can read about what you are doing.

In yesterday's post I showed this delicious Stawberry Pie that Kathy had made and pointed out it was totally great for anyone suffering from Diabetes. We had comments asking for the recipe so here it is.

Diabetic Strawbery Cream Pie
Yummy even if you’re not a diabetic.  Sure satisfies the sweet tooth.
Be sure to use the directions in this recipe and not those on the jello box.
Add fresh strawberries not frozen.  Exchange: 1 ½ carbs (1 starch ½ fruit) 1 fat

Graham Cracker Pie Crust
1 2/3 cup Graham cracker crumbs
¼ cup Splenda sugar
¼ cup + 2 tbls. of Becel  margarine melted
Directions
Mix all the above together until well combined. Press mixture into pie plate and place in the fridge to set for at least 1 to 2 hours.
Ingredients:
1 (deep dish) graham cracker pie crust
1 ½ cups boiling water
1 (5/8 ounce) package sugar-free strawberry jello (or 2.3 ounce package)
3 cups of sliced fresh strawberries
2 cups of plain nonfat yogurt
8 whole strawberries sliced (set aside to decorate the top)
Directions
Place boiling water in large bowl. Stir in jello till dissolved. Chill until slightly set—about 10-20 minutes.
Stir in strawberries chill another 10 minutes.
Fold in yogurt
Pour mixture into graham cracker crust.  Chill till firm at least 4 hours.
Cut into 8 wedges and serve.

It may take a little time but I will eventually setup a page under our header for some of Kathy's recipes.

We headed out to Walmart this afternoon mostly to walk around since the temperature stayed around the freezing mark and after only a few days we were starting to feel the effects of cabin fever. We were looking for a dispenser for clear food wrap that mounts under the cabinets as well as a few other things. We managed to find everything but the food wrap dispenser.

On our way back home we stopped at Canadian Tire and sure enough they had a few. It comes with a 500 foot roll in it already and you can buy 1,000 foot rolls for it as well we can even put  in the rolls that we have here to use up. While we were there we did more walking and looking for ideas of things to use in the trailer. Having found a few other things besides the dispenser we headed for the checkout.

One of our purchases was on a shelf advertising it for $3.99 but when it was scanned came up to $7.99. I mentioned about the sale tag and even walk back collected it off the shelf to prove my point. The Cashier noted that the last digit on the bar code was different even though the product discription was the same so we'd have to pay the higher price. Surprise we didn't take it. Too many times they have identical products to the ones on sale so they can have you pay a higher price then you expected to do. It's the principal if you put that tag on a product sell for the advertised price or keep it.

Well I'm hoping to see a big change in the weather for the better. Those Groundhogs predicted and early Spring and the official date is only 24days away. Be Safe and Enjoy!

  1. Well, the Erin is me ... of Two to Travel. Interesting that when I click on "my icon" in your follower list it shows who I follow, but not my blog profiles. Odd! I'll have to check a few other blogs that I follow to see if it's the same.
