Many of you can relate to Working long hours at your career. Raising your families. Buying a home and paying all the bills related to being homeowners and parents. We're now retired and don't need all that work and expense. Now "It's about time" and what we do to follow our dreams.

Cooking Day, Appointments Made and The Equalizer.

Our Location today is at Wildwood Golf and RV Park, McGregor, Ontario.

I don’t know what is happening because lately I’m sleeping in until 8:00 in the morning lately. That’s not what I want to get used to doing. This was another morning where I didn’t even need to where my housecoat to keep warm. I had everything ready for breakfast and had just looked at The Weather Network by the time Kathy came downstairs.

We finished our Coffee/Tea at the Computers while learning what is going on in the world around us. Some of the RV Bloggers we follow are having slow days while others like Jo at Moms Little Runaway broke her own rules but I don’t think she’ll be doing that again anytime soon.

The forecast for our Area was for moderate temperatures, Cloudy skies and Wind Gusts above the 30 MPH which didn’t leave much room for outdoor activities but with Wind like that it will be drying the sodden ground around our Seasonal Site. That means there is a good chance we’ll be moving there tomorrow.

With our reading and inside chores finished we teamed up to make this a Cooking Day. That means we spend One day cooking and only need to warm our meals up for the rest of the week. With the Arthritis that Kathy has in her hands it makes it difficult for her to cut and chop a lot of the food she prepares so when I can I man the Cutting Board.
First up was she wanted to cook some Corned Beef and Cabbage in our Crock Pot. Since most of that meat is very tough I sliced it length wise then cut the Slice in half before cutting it into smaller Bite Sized Pieces. Then I chopped up the Cabbage and Onions that would go in the mix. Once I was done with that Kathy added the Seasoning, mixed it all together and set it to cook nice and slow which means that it will come out nice and tender.

Next I cleaned up the Two Celery Roots that we found at the Super Store last week. Celery Root is normally a Seasonal Produce found mainly in the Fall so when we found it this Spring we didn’t hesitate to get it. After scrubbing the Dirt off it has to be peeled before it can be sliced about a Quarter Inch thick. Then Kathy boiled them until slightly soft before removing them to cool. Since these were Two Large Sized Roots it took longer then normal. After finishing the Second Root she then started breading and frying the individual Slices.

While Kathy was doing that I was busy cutting, cleaning and chopping some Apples that were starting to get soft. By the time that was finished Kathy was able to put them on the stove to stew while we shared a plate of Tasty Celery Root for our late lunch.

When Kathy went back to cooking the rest of the Celery Root I mashed the Stewed Apples transforming them into Apple Sauce. The best part about this is we know what is in it, all natural ingredients.

I was busy making Phone Calls for Doctor’s Appointments with our Family Doctor, Dentist, Optometrist and even for Kathy to see about a Hearing-Aid as well as making an appointment for Mary from Healthy Heals to come to tend to her feet. I even managed to make my next Blood Donor’s Appointment.

By the time I got off the Phone Kathy was already making a Chocolate Cream Pie and needed my help to whisk up the topping.

I then had some research to do so Kathy decided to make some Jell-O for another dessert.

It was past 4:30 when we sat down for a rest and we had to close the Door because the temperature was starting to drop. Since we’d only had Muffin for breakfast and Celery Root for lunch Kathy stepped it up by serving a second plate of Celery Root for supper along with a piece of the Chocolate Cream Pie for dessert. The best part is there’s still more Celery Root for another meal.

By the time we finished eating supper the Corned Beef was ready to put away for future meals. With that done we got all the Dishes and Cookware cleaned up.

Needing to relax after a busy day we watched a movie. Most of the movies we watch are on DVDs that we pick up On-Sale in different stores. Tonight we watched “The Equalizer” with Denzel Washington. He always seems to project his Character the way it should be. Another Two Thumbs Up performance.

The Wind finally settled down this evening but as long as there’s no Rain tomorrow it looks like we’ll be moving to our Seasonal Site. Thank you for following along and feel free to leave a comment.

Words of Inspiration

  1. I try to do the cooking for a week to. So a quick run to the store tomorrow for fresh veggies and I will spend the rest of the day cooking. I wish they had that celery rood here I would love to try it sure looks good. Hope you get to set up in your seasonal spot tomorrow.
    Had t spray weeds today you know I was on high alert.

  2. I try to cook ahead too, but most times it doesn't work out so well. Your celery root looks delicious!! Hope you get to your site soon so you can really relax!!

  3. I have never really gotten the hang of cooking ahead of time. However, when I actually do cook something I try to have enough of it to last a few meals. My hands are getting worse too. I can't even open a jar anymore.

  4. That is a lot of cooking, but certainly saves time during the week. chocolate cream pie is my fave!! Sounds like you'll be "home" before you know it!

  5. Sounds like you make a good prep cook Rick, Kathy is luck, your such a good hubby.That was a lot of celery root to eat in one day, y'all must love it, happy moving day, soon I hope.

  6. I have never heard of celery root before. I would be curious to know what it tastes like.

    I have to agree with are a very helpful husband and Kathy is one lucky gal.

  7. You two are always so busy and work well together... Just a word of caution on the Crock-Pot, we had someone on our news that the lid exploded by using the latch only meant to use for travel when unplugged.

  8. I don't think I have even had celery root but it seems like lot of work.
